Mocha Macadamia Cookies

125 g butter, chopped
1 tsp vanilla essence
250 g brown sugar
1 egg
3 tsp dry instant coffee
1 tbsp Tia Maria, Kahlua or Baileys
2 tbsp cocoa
225 g plain flour
185 g chopped macadamias, toasted
1 cup sultanas

Beat butter, vanilla essence, sugar and egg with combined coffee and liqueur in medium bowl with electric mixer until smooth.

Stir in dry ingredients and nuts.

Drop level tablespoons of mixture about 5cm apart onto greased oven trays, flattened slightly with a floured fork.

Bake at 200°C for about 15 minutes or until firm.

Makes about 35.
